Rodin e4cde3edb5 ci: remove models not deployed on AI Core ...

The following models are not available on the HAI AI Core proxy and
were causing CI failures:
- claude-sonnet-4-6 (anthropic)
- gpt-4.1
- gpt-4.1-mini
- gpt-5-mini

Keep only gpt-5 which is confirmed working. Full multi-model support
will be restored when feat/aicore-provider-v2 is merged with native
AI Core provider.
