ci: remove unavailable models from review matrix

Only gpt-5 is currently deployed on SAP AI Core. Remove models that
fail with 'no deployment found' errors:
- claude-sonnet-4-6
- gpt-4.1
- gpt-4.1-mini
- gpt-5-mini

This can be reverted once the models are deployed.
